Vanilla is an orchid that originated in Mexico, which retained the monopoly over it until the 18th century – only after that did the rest of the world realize what it had been missing. Today, Madagascar is one of the world's leading producers; specifically, the Sava region, the capital of which is Sambava. The pods, which are produced through the manual pollination of the flowers, are picked when ripe and then placed in boiling water for two minutes. To achieve the dark-brown color and the sweet, delicate aroma, they are then subject to a process that involves heating, maceration and fermentation.
Sambava Épices takes its name from the region's capital city, where the world's finest vanilla is cultivated. The quality we select in Madagascar is vanille bourbon noire, which has an intensely sweet aroma and is lightly fruity, laced with cocoa notes.
Vanilla helps to combat stress, and it has a stimulant and antiseptic effect. It absorbs odors, so it should be stored away from other flavorings and spices. We recommend storing it in a sealed jar, together with brown sugar, which absorbs the aroma. It is at its best in the preparation of puddings, cakes and liqueurs. It is also ideal as a flavoring for rice.
